For the toffee sauce:

  • 1/2 cup (110g) unsalted butter
  • 1 cup (200g) brown sugar
  • 1/2 cup (120ml) heavy cream
Instructions:
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch (23cm) square baking dish.
  2. In a medium-sized mixing bowl, combine the chopped dates and boiling water. Stir in the baking soda and set aside to cool.
  3. In a separate mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Sift together the flour and baking powder, then add them to the butter mixture. Stir in the date mixture until well combined.
  5. Pour the batter into the prepared baking dish and spread it out evenly.
  6. Bake the pudding for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the pudding is baking, make the toffee sauce. In a medium-sized saucepan, melt the butter over medium heat. Stir in the brown sugar and cream, and bring the mixture to a boil. Reduce the heat and let the sauce simmer for 5 minutes.
  8. Once the pudding is done, remove it from the oven and pour the toffee sauce over the top, spreading it evenly.
  9. Serve the sticky toffee pudding warm, with a scoop of vanilla ice cream or whipped cream, if desired.
