A lava cake, also known as a “chocolate fondant,” is a small, individual-sized chocolate cake that has a liquid chocolate center. It is a rich, decadent dessert that is perfect for chocolate lovers.

Here is a basic recipe for making a lava cake:

Ingredients:
  • 4 oz of semisweet chocolate
  • 1/2 cup of butter
  • 3/4 cup of granulated sugar
  • 3 eggs
  • 3 egg yolks
  • 1/2 cup of all-purpose flour
  • Powdered sugar for dusting

Instructions:
  1. Preheat your oven to 425°F (220°C).
  2. Grease six 6-ounce ramekins with butter and dust them with flour.
  3. In a double boiler, melt the chocolate and butter together, stirring until smooth.
  4. Remove the chocolate mixture from the heat and stir in the sugar.
  5. Add in the eggs and egg yolks, one at a time, stirring well after each addition.
  6. Stir in the flour until well blended.
  7. Pour the batter into the prepared ramekins, filling them about 2/3 of the way.
  8. Bake the cakes for 12-15 minutes, or until the edges are set but the centers are still soft.
  9. Remove the cakes from the oven and let them cool for a few minutes.
  10. Run a knife around the edges of the cakes to loosen them and invert them onto plates.
  11. Dust the cakes with powdered sugar and serve warm.
